Advantages of using dry yeast instead of fresh compressed yeast:
- Dry yeast from the bakery has a much longer use-by date than fresh compressed yeast.
- It is easier to preserve.
- It does not need to be kept cold.
To match its measurement with fresh yeast, we divide between three. For example, if in the recipe it says 30g of fresh compressed yeast, we should add 10g of dry yeast.
